All you need for this recipe is three ingredients: butternut squash, chicken broth and leeks. So easy! In no time at all you’ll have delicious, creamy soup on the table!
Homemade butternut squash soup is probably one of my favorite foods. It really is comfort in a bowl, especially during the cold fall and winter evenings. This soup is so incredibly easy to make – if I can do it, so can you! A minimal ingredient list really allows the flavor of the butternut squash to shine, in my opinion!
One of the things I love the most about this soup (other than the fact that it only has three ingredients!) is that it tastes so creamy, but is dairy-free… a creamy cream-less soup (try saying that five times fast)!
Did I also mention how easy this soup is to make? Yes? Okay moving on….
I start off by roasting the butternut squash and leeks in the oven. I usually buy pre-cut squash from the store, because I’m all about saving as much time as possible! Plus, I suck at cutting squash.For this recipe I couldn’t find any pre-cut squash at the store, so I had my husband cut it for me! Once the squash and leeks have cooled, I put them in my Vitamix along with the chicken broth, blend until smooth, and that’s it! You have a delicious, healthy and easy-to-make soup on the table.

- 2 small butternut squash (or 1 medium/large), cut and cubed
- 3 cups no-salt added chicken broth
- 2 leaks, sliced into rings
- Preheat oven to 375F.
- Dice butternut squash into cubes, place in bowl along with leeks. Coat with olive oil and add salt & pepper to taste.
- Bake in oven for 50 minutes.
- Once cooled, add to blender along with chicken broth. Blend until smooth.
- Place soup in pot, bring to boil then simmer.
